NASSM is almost here!!!

rt66smalwebl.jpgRegister for the website at www.nassm2013.com.  Once you have been approved, you may register & pay for the event by going to the NASSM2013 Registration at the top.  Register for single up if you are alone ($90), or double up if you have a passenger ($170).

Get your hotel!!!  As of June 1st, all hotel rooms have been released to the general public.

There are many activities.  Be sure to register & pay for Black Bart's dinner, and register for the Car Shows and Rides. 

See you there!!!

I have the two recipes requested.

Fruit Dip

8 oz cream cheese
small jar marshmallow cream
cinnamon
orange juice

Cream together the cream cheese and marshmallow cream and add a dash of cinnamon. Add orange juice a little at a time until you get the consistency you like. Refrigerate.


Chicken Potato Salad

5 lbs potatoes, pealed, cubed, and boiled
2 apples, cubed
4 hard boiled eggs, chopped
2 or 3 cooked chicken breast, chopped
1/2 cup chopped pecans
2 ribs celery, minced
small onion, minced
salt, pepper, garlic powder, and oregano
mustard and mayonnaise

Mix all main ingredients together in a large bowl and add the salt, pepper, garlic powder, and oregano to taste. Add about a tablespoon of mustard and enough mayonnaise to hold it all together. Refrigerate.

I am sorry, but, I don't measure when I cook. These are estimates. You can't really go wrong on either recipe. Just use the amounts that you think taste good.

SIMPLE PINEAPPLE STUFFING (from AllRecipes.com)

Ingredients:
-1 (15.25 ounce) can crushed pineapple, drained (I use a whole 20oz can drained)
-1 (5 ounce) can sweetened condensed milk
-1/2 cup white sugar
-12 slices white bread, cubed (I use a loaf of french bread with the bottom and ends cut off)
-3 beaten eggs

Directions:
1. Preheat oven to 350 degrees F (175 degrees C). Spray a 9x13 inch glass baking dish with vegetable cooking spray.
2. Stir together, drained pineapple, milk, sugar, and eggs in a large bowl; mix well. Gently fold bread cubes in, until well moistened. Pour mixture into prepared dish.
3. Bake in preheated oven until lightly golden on top, 25 to 30 minutes

Is this what you are looking for Jim? This is what Joe and I received when we went on our "Behind the Fun" tour.

Warm Chocolate Melting Cake (Yield: 4 servings)

6oz. dark chocolate
6oz. butter
4ea. eggs
6oz. sugar
2oz. flour

-Melt the chocolate and the butter.
-Mix the eggs and sugar and whisk for a few minutes. Add the flour.
-Add the egg mix to the melted chocolate and mix.
-Pour the mix in a greased mold.
-Bake directly in the oven at 390 degrees F for 14 minutes.

Note: Make sure the eggs are at room temperature and chocolate is warm enough while making the mixture.

Serve with ice cream and fruit garnish

As requested:

Sweet Potato Casserole
Ingredients:
3 cups mashed sweet potatoes (Fresh or Can)
1/2 cup sugar (Regular or Splenda)
2 beaten eggs
1/4 cup margarine, melted
1/2 cup milk (Low Fat is good too)
1 1/2 teaspoons vanilla

Topping:
1 cup brown sugar
1/3 cup flour
1 cup chopped pecans
1/3 cup margarine, melted

Directions:
1. In large mixing bowl,mix sweet potatoes,sugar,eggs,margarine,milk and vanilla.
2. Pour into 9 inch square greased (PAM spray)baking dish.
3. Mix topping ingredients and sprinkle over potatoes.
4. Bake at 350 degrees for 35-40 minutes.
5. Can be doubled and baked in 9x13 dish.

Hot Crescents

1 pkg, (8 oz,) Cream Cheese - softened
8 slices Bacon - cooked and crumbled
1/3 c. Parmesan Cheese
1/4 c. finely chopped onions (optional)
1 Tbsp. milk
2 cans (8oz each) crescent dinner rolls

Mix all ingredients except crescent dough.

Separate each can of dough into 8 triangles; spread mixture on the triangle. Cut triangle in half lengthwise and roll from small point to larger side of triangle. Place Point-sides down on baking sheet.

375 degree oven
Bake 12 - 15 min or until golden brown. Serve warm.
